About the Chef

Executive Chef: Jaime Medrano

Originally from Puebla, Mexico, Jaime Medrano has over 45 years of experience under his chef’s hat. He has a vast amount of know-how in preparing cuisine from around the world, and has been with the Fiesta Americana family for over 35 years. Chef Jaime’s specialty is Mexican Gastronomy, and he enjoys nothing more than treating guests to the finest flavors of Mexico.

Restaurants

Kambú

Dramatically located on the ocean’s edge and open late morning to evening, Kambú is like three restaurants in one. Your attendees can start the day with omelettes, eggs, pancakes, waffles, pastries and plenty more. Later in the day, enjoy Tex Mex favorites for lunch, such as fresh treasures from the sea, spicy peppers and Mexican rice, as well as barbecue, hamburgers, hot dogs and a variety of other snacks and light meals. When night falls, lights and music transform the restaurant into an upscale restaurant serving up sophisticated Asian flavors.

Kalmia

Panoramic views of the sparkling Caribbean delight guests as they enjoy a variety of buffet favorites for breakfast, lunch and dinner at this casual, thatched-roof restaurant. Fuel up for the day with everything from baked breads and fresh pastries to tropical fruits and traditional breakfast fare. Special theme buffets are also offered several days a week, and private dinners can always be arranged for groups. Open daily from 6:30am to 10:30pm.

El Mexicano

Built in the style of traditional Mexican houses and featuring a hand-thatched palapa roof, El Mexicano offers an extensive menu of traditional Mexican cuisine. The elegant décor is comprised of glass cases filled with regional art, plus stained-glass windows and traditional pottery. An impressive wine list and an extensive variety of tequilas are available. Specials touches such as classic Mexican movies projected outside make dining here even more memorable. Open for dinner from 5pm to 10:30 pm.

Rosato

Chic Rosato is one of the most popular restaurants on the property, with a varied menu including Italian favorites such as antipasti, soups and salads and hot-from-the-oven pizzas, as well as sumptuous starters and tempting desserts (which come bite-sized for less guilt). Rosato is open daily from 5 pm to 10:30 pm.

Cevichería

Situated in an open-air palapa between the pools and the sparkling Caribbean, the Cervecería serves up delicious snacks, hot salsas and popular bucket of beers amid the rhythms of Salsa and Merengue. When night falls, this ceviche bar morphs into a Taquería and serves a variety of tacos... till 1am—the perfect late-night snack.

Tapas Bar

A casual, yet modern Spanish ambiance pervades the Tapas Bar, which plays live international music and serves a menu of tasty hot and cold tapas. It’s a great spot to have a snack or a couple of drinks before dinner or after an evening out. The bar is open daily from 5:30pm to 1am.

Deli Café

The sunny and casual open-air café serves up coffees, pastries, ice cream and more, with a variety of chairs and umbrellas. Drop by to relax with a yummy treat or grab an afternoon cup of coffee.
